Chia Seed Recipes

The beautiful thing about chia seeds is they can be added to almost any recipe to gain all the nutritious benefits they offer to us. It's really only limited by our imagination as to where we add chia in our foods. The “Stealth Health” factor makes them ideal for the fussiest eaters of any age.

Chia Gel 

The most important recipe is the chia gel. Always keep on hand to mix in a variety of things! Chia gel can be used to replace oils in most baking recipes that call for oil or butter. It can also replace eggs in many recipes as well. It can be blended or used "as is".

How to prepare your Chia Seed Gel 

The most convenient way to prepare Chia Seeds is to firstly make a Chia Seed Gel mixture, which you then use to mix with your favorite beverage or food.
We recommend that you prepare the Chia Seed Gel in a jug that has an air tight seal, that way you can store the gel mixture in the fridge for up to 3 weeks. The following instructions relate to using a 2 Litre jug:

  • Ensure the jug is completely dry before commencing.
  • Add between 8 – 12 tablespoons of Chia Seeds into the dry 2 Litre jug. (8 tablespoons for first time users, after approx 2 weeks increase to 10 – 12 tablespoons
  • Pour water (filtered or spring water preferred) and begin stirring the mixture immediately until the jug is full. This will avoid the seeds from “clumping” and sticking together
  • Keep stirring the mixture for approx 30 – 40 seconds. The Chia Seeds will begin forming a gel mixture within a couple of minutes; stir a few more times over the next 15 minutes. The Chia Seed gel mixture is now ready to be consumed 


Chia Spread 

100g chia gel

100g softened butter

Place chia gel in a blender and blend until smooth. Add softened butter and blend until smooth. Place in airtight container and use as you would normal butter from toast to melting for popcorn it's great!


Turkey Chia Meatloaf


  • 500g turkey mince
  • 1/2-cup chia gel
  • 1-cup spelt or rye breadcrumbs
  • 1 brown onion diced
  • 1 med green capsicum diced
  • 4 tablespoons dried sage
  • 2 teaspoons season salt
  • pinch of turmeric
  • pinch of cayenne pepper
  • tomato or barbeque sauce
  • olive oil spray

Pre-heat oven to 180c



Mix all ingredients together then shape into a loaf. Place foil on baking pan and spray lightly with the olive oil spray and place meatloaf in centre. Brush on tomato or B-B-Q sauce on top and cover with foil and place on middle rack in preheated 180c oven for 1 hour or until done. Serve with steamed veggies and Chia mashed taters.

Chia Pancakes


1 cup wholemeal flour
1 cup wholemeal spelt flour
2tsp. baking powder
2tlbs brown sugar
2tbls honey
3/4 cup chia gel
2 cups milk (soy, chia milk or regular milk)
pinch of salt
olive oil


Mix spelt and wholemeal together with salt, baking powder and brown sugar.

Stir in chia gel, milk and honey then mix together to make a smooth batter. Pour batter on lightly oiled fry pan. When bubbles appear over top of pancake turn over.

For thinner batter add more milk for thicker use less milk. These are even great cold. Place some jam on and roll'em up for later!



Chia Chiller


2 Cups Chia Gel

1 Cup fresh fruit, juiced

Pulp from juiced fruit


Mix the gel, fruit juice and pulp together and place in freezer for 1 hour and serve.

For special effect layer 4 desert cups. Start with chia gel then fruit pulp then gel again and top with fruit juice a mint leaf and sprinkle with cinnamon.

Use more than one fruit for this desert and enjoy!


Chia Lemonade



  • 1 Tablespoon chia seeds
  • 1 cup natural apple juice
  • 2 tablespoons lemon juice
  • Ice

Directions:Combine chia seeds and apple juice and let soak 30 minutes until it thickens likejelly. Add lemon and ice for a refreshing slushy drink.


Chocolate Chia Seed & Walnut Energy Bars

Makes 10 bars

Prep time: 15 minutes


1 1/2 cups pitted dates (Warning:  pinch each date carefully to be sure the pit has been removed!  An errant pit will stop your food processor cold!)

1/3 cup raw cocoa powder

1/3 cup whole chia seeds

3/4 tsp vanilla extract (optional)

1 cup raw walnut pieces

Oat flour for dusting


1.  Place dates in bowl of food processor; puree until thick paste forms.

2.  Add cocoa powder, chia seeds, vanilla. blend until ingredients are well mixed.

3. Add walnuts, blend until nuts are finely chopped and well distributed through date mixture.

4. Spread large sheet of wax paper on work surface, and dust with oat flour, if using

5.  Transfer date mixture to wax paper, and press / roll mixture into 1/2 inch thick rectangle.  Wrap tightly with the waxed paper, and then with foil.  Chill overnight.
